Confectionary - Gelatine is used as gel former, whipping agent, binding agent, protective colloid and emulsifier. It is commonly used in confectionary products because it foams, gels, and solidifies into a piece which melts in the mouth. Gelatine is used in the production of gummies, toffees, chewy candies and whipped confectionaries, such as marshmallows.

Meat - Absorbs meat juices and gives form and structure to products that would otherwise fall apart, keeps from drying out, and makes them look appetising by protecting them from light and oxygen. Gelatine also increases the protein concentration.
